    I noticed on the Fermentis site that the only yeast resembling US-56 was US-05. It appears they renamed or replaced US-56 with US-05.

    (5 gallons/19 L, all grain)
    OG = 1.050, FG = 1.010
    IBU = 25, SRM = 2-4, ABV = 5.2%

    Ingredients:
    5.3 lb (2.4 kg) Belgian Pilsner Malt (1.4 - 1.8 L)
    5.3 lb (2.4 kg) Malted Wheat (1.7 - 2.4 L)
    0.35 lb (0.16 kg) CaraPils Malt (6 - 9 L)
    0.2 lb (0.1 kg) Acidulated Malt (1.7 - 3.2 L)
    5.4 AAU German Northern Brewer hops (60 min)
                 (0.57 oz./16 g of 9.5% alpha acids)
    2.7 AAU Czech Saaz hops (2 min)
                 (0.9 oz./26 g of 3.0% alpha acids)
    0.33 oz. (9.4 g) of coarsely crushed fresh Indian coriander (10 min)
    0.33 oz. (9.4 g) of coarsely crushed sweet Curacao orange peel (10 min)
    0.4 oz. (11 g) of coarsely crushed fresh Indian coriander (0 min)
    0.33 oz. (9.4 g) of coarsely crushed sweet Curacao orange peel (0 min)

    Wyeast 3944 (Belgian Wit) or White Labs WLP400 (Belgian Wit) Yeast

    Step by Step:  Mash grains at 150 F (66 C) for 90 minutes.  Boil wort for
    75 minutes adding hops and spices per scheduled times.  Cool wort to room
    temperature and drain or rack the wort off of the trub.  Aerate the cool
    wort and oxygenate.  Ferment at 66 F (19 C) for 10 days in the primary and
    2 weeks in the secondary.

    (5 gallons, extract with steeping grains)
    OG: 1.085          FG: 1.025
    IBU: 45

    Ingredients:
    8.75 lbs. Light dry malt extract
    0.87 lbs. German medium CaraMunich (45 L)
    0.76 lbs. German dark CaraMunich (60 L)
    0.20 lbs. Chocolate malt
    0.67 lbs. Carafa II Special malt
    0.25 lbs. CaraPils malt
    14 AAU German Perle hops (60 min) (1.75 oz of 8.0% alpha acids)
    1.4 AAU of Hallertauer Hershbrucker hops (10 min) (0.43 oz of 3.3% alpha
    acids)
    0.7 AAU of Hallertauer Hershbrucker hops (3 min) (0.22 oz of 3.3% alpha
    acids)
    White Labs WLP029 German Ale/Kolsch Yeast fermented at 62 F

    Step by Step:  Steep grains at 155 F in 5 gallons of water for 30 minutes.
    Remove and rinse grains with 1 gallon of 165 F water.  Bring to boil,
    remove heat, and add extract.  Bring to a boil for 75 minutes, add hops per
    schedule, chill, and ferment
